You can change the approvers of an in-progress workflow record at the current node. That is, you designate another one to review the record.
If former approvers in a workflow are assigned to other departments, you can change approvers to hand over the work.

How to Change Approvers?
Admins and members can change approvers in Manage Data and in the permission set respectively. The following are the ways to change approvers:
Method 1 Changing Approvers in Manage Data
An admin can change workflow approvers in Manage Data.
1. Go to Manage Data and click an in-progress record.
2. On the data details page, click Change Approver and then the box under Current Approver of This Node. Then you can select members in the Member List. After that, click OK to save your settings.
Method 2 Changing Approvers in a Permission Set
Besides admins, members with the corresponding permission can also change approvers.
1. Go to Publish > To Members > Add Member, select members, and grant permission to members in the following two ways:
Select Custom from the drop-down list of Member Permission and tick the actions you want to grant to them.
Directly add members to the Manage All Workflows permission set.
2. Select the Custom permission and click an in-progress record to change approvers. Changing approvers in a permission set is the same as that in Manage Data.
More to Know
1. You can increase or decrease the number of approvers when changing approvers. Note that the number should be within the range of 1 to 200.
2. After you change approvers, the former approver's tasks will be canceled and new tasks added for the new approver.
3. You can only batch change approvers in Manage Data.
4. If you change approvers at the following nodes, the number of approvers should not be changed:
The start node
The node for which you set multi-level approval
The node for which you add a pre-approver or post-approver
